A detour from the sweet...



Many know but for those who don't, Thanksgiving is my favorite holiday. It is the holiday that centers around my 2 favorite things: food, gratitude, family, and food. :) I love setting a glorious table competed to the smallest detail. This year my table was smaller than I am used to, 4. But that was not grounds for mediocrity. We had stuffing, cranberry sauce, flakey yet creamy pumpkin pie, and then there was the turkey. I was tired of the same old same old so I pulled from a favorite, bacon wrapped figs, and applied it to turkey. So here you have it:

Bacon Wrapped Turkey
I stuffed the turkey with:
  • 1 1/2 c. fresh cranberries (halved)
  • 4T fresh sage (coarsely chopped)
  • 4 honey crisp apples (diced)
  • 3T fresh ginger (diced fine)
  • kosher salt
  • pepper
and yes
  • 1/2 c. uncooked bacon (chopped)
I cooked the turkey according to the label removing the bacon covering 15 minutes before the time was up to allow the turkey skin to crisp. I then removed the "stuffing" separating the apples from the rest and served them on the side. They surprisingly had a lovely smokey flavor. All in all, bacon-wrapped-turkey was a lovely? detour from tradition.
